This essay outlines the historical characteristics and the basic rules of pre-industrial ration systems, with specific reference to Parmesan eighteen-century reality. Starting from the importance of grains in pre-industrial centuries and the fundamental cornerstones of the legislation ration, the author focuses particularly very troubled material life in the mountains, where smuggling is often used to circumvent the failure of grains supply legislation. The essay is based on unpublished archival sources, for the most part unknown to historians.
