Food safety has different ways of presenting itself in the international trade of agricultural products. The development of businesses and local legislations has led to several models of food safety in the world. In this framework we can see ethical productions: organic, local and fair trade. They can seem safe and natural but, often, they can be dangerous for the environment and for human health and do not contribute to the realization of food security, either. However, the European and Italian models of food safety are regulated by a general legislation: the UE regulation n. 178/2002. This regulation intends to save the consumers’ ealth along the food chain from farm to table. In this context it is very important to organize the supply of food products. For this reason farmers and industrial producers can utilise producers’ organizations to promote good practices to safeguard the environment and the well-being of animals. Th us it would be possible to improve the quality of the production and of food safety, to help the process of traceability and the stipulation of agreements.
