The food industry has an important role inside the Italian manufacturing industry. Its characteristics are very diff erent at the sectorial level and in the territorial distribution. In the (1981-2001) long run, establishments and employees have been reduced less in the food industry respect to the other manufacturing sectors. Th e reduction of employees and fi rms has been greater in North-West and in the Centre of Italy, while, there has been a small increase in North East and in the South of Italy. In the 2001, important geographical realities emerge in the meat, in the dairy and in the fruit & vegetables sectors. Industrial food districts are also relevant and their level of development is diff erentiated not only in the productive specialisation but also in the fi rms’ structure. Th ese realities are often linked with typical and quality products of agrifood sector and their contribution to the international trade is relevant. Th e food exports has been continuously increasing in the last ten years. Th e competitiveness on the international markets of these different realities, asks for a really good monitoring of the changes in progress.
